Cream Cheese Fruit Squares

1 cup granulated sugar, divided use
1/3 cup butter
1 1/2 cups graham cracker crumbs
3 (8-ounce each) packages cream cheese, softened
4 large eggs
1 teaspoon vanilla extract
1 (21-ounce) container any flavor fruit pie filling
  1. Crust: In a saucepan, melt 1/4 cup sugar and butter. Stir in graham cracker crumbs. Remove, press onto the bottom of a 13 x 9-inch baking dish. Set aside.
  2. Filling: In a large bowl, beat softened cream cheese until smooth. Gradually beat in remaining sugar, eggs (one at a time), and vanilla. Spoon blueberry pie filling over the crust and pour the cream cheese mixture on top. Bake in a 325 degree F. oven until set, about 45 to 50 minutes.
  3. Chill until firm, about 2 hours. Cut into squares.

Makes 16 squares.
