Easy Cream Cheese Fruit Squares

1 cup granulated sugar, divided use
1/3 cup butter
1 1/2 cups graham cracker crumbs
3 (8-ounce each) packages cream cheese
4 large eggs
1 teaspoon vanilla extract
1 (21-ounce) can blueberry pie filling

  1. Preheat oven to 375º F (175º C).
  2. In a medium saucepan, combine 1/4 cup sugar and butter; heat until the butter is melted and smooth. Stir in graham cracker crumbs until well mixed. Press evenly over the bottom of a 13 x 9-inch baking pan
  3. In a large bowl with an electric mixer, beat 24-ounces cream cheese until smooth. Gradually beat in 3/4 cup sugar, then eggs, one at a time, and finally vanilla. Spoon blueberry pie filling over the crust and top with the cream cheese mixture.
  4. Bake just until set, about 45 to 50 minutes. Cool then chill until cold, about 2 hours before cutting into squares.

Makes 24 squares.
