Marbled Mint Brownies

1 (22.5-ounce) package fudge brownie mix
2 large eggs
1/4 cup water
1/4 cup vegetable oil
1 (8-ounce) package reduced fat cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon peppermint extract
  1. Prepare brownie mix according to package directions using 1 egg, 1/4 cup water, and vegetable oil; spread in a lightly greased 13 x 9 x 2-inch pan.
  2. Beat remaining 1 egg, cream cheese, sugar, and peppermint extract at medium speed with an electric mixer until well blended. Pour over brownie mixture, and swirl gently with a knife.
  3. Bake at 350*F (175*C) for 35 to 40 minutes or until lightly browned. Cool in pan on a wire rack. Cut into 1-inch squares. Cover and chill.

Makes 4 dozen brownies.
