A quick and easy chewy oatmeal cookie bar make with a yellow cake-mix.

Oatmeal Chew Bars

1 (18.25-ounce) package yellow cake mix
3 cups quick cooking oatmeal
2 cups brown sugar, firmly packed
2 teaspoons baking soda
1 cup butter or margarine
Aluminum foil
2 cups strawberry jam
  1. Preheat oven to 375°F (190°C). Line a 9-inch baking pan with aluminum foil and lightly grease. Set aside.
  2. Combine yellow cake mix and baking soda. Cut in butter until the size of small peas. Spread half the oatmeal mixture in the prepared pan; pressing down.
  3. Microwave strawberry jam on HIGH for 1 minute. Spread evenly over the oatmeal mixture and sprinkle the reserved oatmeal mixture on top.
  4. Bake for 30 to 35 minutes, or until golden brown. Cool before removing from the pan and cutting into bars.

Makes 16 bars.
