Sherry's cookie bars have a chewy chocolate brownie crust spread with a buttery cream filling and topped with a semisweet chocolate glaze.

Sherry's Bars

4 (1-ounce each) squares unsweetened baking chocolate
1 cup butter or margarine
4 large eggs
2 cups granulated sugar
1 cup all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup butter
4 cups powdered sugar
1/4 cup half and half
4 tablespoons butter
2 cups semisweet chocolate chips
3 tablespoons half-and-half
4 tablespoons butter
  1. Preheat oven to 350°F (175°C).
  2. Melt together baking chocolate and butter. Add eggs, sugar, flour, salt, and vanilla. Spread the mixture in a 10 x 15-inch jellyroll pan and bake for 20 minutes. Do not overbake. Refrigerate until cool.
  3. Meanwhile, cream together 1/2 cup butter and powdered sugar. Slowly add 1/4 cup half-and-half and 4 tablespoons butter. Beat until light and fluffy. Spread over the cooked chocolate base.
  4. Melt together chocolate chips, 3 tablespoons half-and-half, and 4 tablespoons butter. Mix well, then cool to room temperature. Spread over the filling and refrigerate until set.
  5. Cut into squares with a sharp knife.

Makes 24 bars.
