Braised Beef with White Beans

Recipe Ingredients:

4 beef chuck mock tender steaks (6 ounces each)
1 teaspoon olive oil
1 1/2 cups chopped onions
1 (14.5-ounce) can Italian-style diced tomatoes, undrained
1 (15-ounce) can white beans, drained
2 cups coarsely chopped fresh spinach
Freshly grated Parmesan cheese

Cooking Directions:

  1. Preheat oil in large nonstick skillet over medium heat until hot; brown beef steaks.
  2. Add onions, tomatoes and 1/4 teaspoon each salt and ground black pepper; bring to a boil. Reduce heat; cover tightly and simmer 1 1/2 to 1 3/4 hours or until beef is fork to tender.
  3. Remove steaks. Add beans; simmer and stir 7 to 10 minutes or until thickened. Stir in spinach; remove from heat. Let stand 1 minutes Serve with steaks. Sprinkle with cheese.
