Corned Beef and Cabbage
Your basic, no-frills corned beef and cabbage dish. Plain and simple, this is the corned beef dinner many grew up on.
2 to 2 1/2 pounds corned beef
6 potatoes, peeled and quartered
2 carrots, sliced
1 cabbage, cut into wedges
- Wash corned beef in cold water, then cover with water in a saucepan and bring to a boil. Cook for five minutes, skim foam off, cover again, and simmer for 2 hours.
- Add the potatoes and carrots 30 minutes before the meat is finished; cook 20 minutes then add the cabbage and cook 10 more minutes.
Makes 6 servings.
