Glazed Beef Kabobs
Recipe courtesy of Certified Angus Beef LLC.
Recipe Ingredients:
Basting Glaze:
1/4 cup bottled barbecue sauce
1/3 cup currant, grape, or apple jelly
1 teaspoon prepared mustard
Beef Kabobs:
1 pound Certified Angus Beef® top sirloin, cut into 1-inch cubes
1 large red or green bell pepper, cut into 1-inch pieces
1 medium sweet onion, quartered and separated
8 whole, fresh mushrooms
Cooking Directions:
- Prepare Basting Glaze: In a small saucepan, combine basting glaze ingredients; heat over medium heat until jelly melts, about 1 to 2 minutes, stirring constantly. Reserve 1/3 cup glaze for basting.
- On four long, metal skewers alternately thread beef, onion, mushrooms and pepper. Brush glaze onto beef kabobs.
- Grill kabobs over medium to hot coals (or broil in oven about 4 inches from heat source) for 12 to 14 minutes or until beef reaches desired doneness. Turn beef once during cooking to baste with reserved marinade; discarding any unused glaze.
- Serve over hot, cooked rice.
Makes 4 servings.
