A southwestern sauce is brushed over a
scored beef flank steak prior to grilling. To serve, slice steak
on the diagonal.
Grilled Flank Steak
- 1/4 cup chopped onion
1 garlic clove, crushed
1/2 teaspoon chili powder
1 tablespoon butter
1/2 cup tomato sauce
2 tablespoons distilled vinegar
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 1/2 pounds flank steak
- In a small saucepan, cook chopped onion,
crushed garlic clove, and chili powder in butter until tender.
Stir in tomato sauce, vinegar, honey, salt, and pepper; bring
to boiling, stirring constantly. Boil for 5 minutes, or until
slightly thickened.
- Meanwhile, pat dry flank steak and score
diagonally into diamonds on both sides. Brush with sauce; grill
over medium coals for 7 minutes until done, brushing occasionally
with the remaining sauce.
Makes 6 servings.
