Marge's Pot Roast
A one-dish, forget-about-it, pot roast from Bob's mom. Recipe submitted by Jessica Spizzirri from Illinois.
2 (10.75-ounce) cans cream of mushroom condensed soup
2 (2.4-ounce) package dry onion soup mix
1 (4-pound) bone-in beef pot roast
1 pound baby carrots
6 medium potatoes, peeled and cubed
- Preheat oven to 325°F (160°C).
- Pour 1 can of soup in bottom of roasting pan. Mix in 1 packet soup mix. Place roast on top of soup. Add carrots and potatoes.
- Mix other can of soup with onion soup mix. Pour over top of roast. Cover with foil. Bake for 3 hours. Stir every hour to keep soup well mixed.
Makes 8 servings.
