Orange-Pepper Beef Steak.

Broiled beef tenderloin steaks, coated with coarse black pepper and a tangy orange marmalade glaze.

Orange-Pepper Beef Steaks

4 beef tenderloin steaks, cut 1-inch thick (about 1 pound)
1/2 cup orange marmalade
4 teaspoons cider vinegar
1/2 teaspoon ground ginger
2 teaspoons coarse grind black pepper
  1. Combine marmalade, vinegar and ginger in small bowl.
  2. Press pepper onto beef steaks.
  3. Place steaks on rack in broiler pan so surface of beef is 2 to 3-inches from heat. Brush tops of steaks with marmalade mixture. Broil 13 to 16 minutes for medium rare to medium doneness, turning once and brushing with remaining marmalade mixture.

Makes 4 servings.
