Prime rib, an elegant and impressive entree, served with a side of sour cream and horseradish sauce.

Prime Rib

1 (5 pound) rib roast
1 clove garlic, peeled
1 teaspoon salt
1 teaspoon paprika
1 cup sour cream
1/4 cup prepared horseradish
Salt and ground pepper to taste
  1. Preheat oven to 350°F (175°C).
  2. Rub the rib roast with the garlic; sprinkle with salt and paprika. Place in a roasting pan with the fat side up. Roast uncovered, for 30 minutes.
  3. Reduce heat to 325°F (160°C) and cook until meat is tender, about 1 1/2 to 2 hours.
  4. Combine sour cream and horseradish; season to taste with salt and pepper. Serve with the sliced prime rib.

Makes 8 servings.
