For a Mexican-style brunch whip up a batch of these breakfast tortillas for your banditos. In Mexico they call them machaca con huevos y tortillas, we know them as tasty tortillas filled with a beefy-egg mixture, served-up with refried beans, salsa and cheese.
Shredded Beef with Eggs and Tortillas
- 1 tablespoon butter or margarine
6 large eggs, lightly beaten
2 cups shredded beef filling
10 (8-inch) soft taco-size flour tortillas, warmed
1 (16-ounce) can ORTEGA® Refried Beans, warmed
2 cups (8-ounces) shredded cheddar or fancy shredded monterey jack cheese
ORTEGA Salsa - Homestyle Recipe for accompaniment
- Heat butter in large skillet over medium-high heat. Add eggs; cook, stirring frequently, for 2 to 3 minutes or until eggs just begin to set.
- Stir in shredded beef filling. Cook, stirring occasionally, for 2 to 3 minutes or until eggs are cooked and beef is heated through. Serve beef filling with tortillas, beans, cheese and salsa.
