A quick and easy beef dish. Pan-seared beef flank steak is sliced and then braised in a seasoned onion and tomato sauce for a short time.

Special Flank Steak

Vegetable cooking spray
1 1/4 pounds flank steak
1 onion, sliced
2 tomatoes, seeded and chopped
1/2 cup water
1 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon ground pepper
  1. Spray a large skillet with vegetable cooking spray, and over high heat, quickly sear flank steak. Remove to a cutting board.
  2. In the skillet combine thinly sliced onion, chopped tomatoes, water, and chili powder. Simmer uncovered for 5 minutes.
  3. Slice the steak against the grain and return to the skillet and cook until done, about 5 minutes.
  4. Season with garlic salt, and pepper.

Makes 4 servings.
