Tender beef sirloin makes for excellent skewers. Even better when marinated in a simple mixture of Italian salad dressing mix and mayonnaise.

Zesty Grilled Kabobs

1 1/2 pounds boneless beef sirloin, cut into 1-inch cubes
2 cups fresh mushrooms, trimmed
1 medium green bell pepper, seeded and cut into 1-inch pieces
1 medium onion, quartered
1 medium zucchini, sliced into 1-inch rounds
1 cup mayonnaise
1 packet dry Italian salad dressing mix
2 tablespoons red wine vinegar
2 tablespoons water
  1. Alternate beef, mushrooms, bell pepper, onion and zucchini on skewers*. Place in a shallow baking dish in a single layer.
  2. In a small bowl, whisk mayonnaise, salad dressing mix, vinegar and water. Reserve 1/2 cup in a separate bowl and refrigerate. Pour remaining mixture over skewers; turning until evenly coated. Refrigerate for 1 hour or up to 4.
  3. Preheat grill.
  4. Lightly oil grill or spray with vegetable cooking spray. Remove skewers from marinade and place on grill; discard marinade. Cook 10 to 15 minutes, or until desired doneness is reached, turning once. Serve immediately with reserved mayonnaise sauce.

Makes 6 servings.

*If using bamboo skewers, soak in water for an hour before using to keep them from scorching on the grill.
