Caribbean Milk Cooler.

Chill out with this icy tropical pineapple and milk drink.

Caribbean Milk Cooler

2 cups fat free skim or 1% lowfat milk
2 cups unsweetened pineapple juice
1 teaspoon vanilla extract
1 teaspoon coconut extract
2 tablespoons granulated sugar
Ice cubes
Mint sprigs, optional
  1. In a blender container, combine all ingredients except ice cubes and mint and blend on high speed until frothy.
  2. Pour into four tall glasses filled with ice cubes. Garnish with mint sprigs, if desired. Serve in a chilled glass.

Makes 4 servings.

Variation: For a thicker drink, freeze pineapple juice in an ice cube tray. Blend these pineapple cubes with all other ingredients except mint. Omit regular ice cubes.

Nutritional facts: 170 cal., 5 g pro., 39 g carb., 0 g fat, 5 mg chol., 60 mg sodium. Daily value: 15% calcium. Note: Fat free skim milk was used for the nutrition analysis of this recipe.
