Serve this delicious coffee cocktail at your next holiday fete.

Columbia Coffee Fizz

1 packet Starbucks VIA Colombia (reserve a little for garnish)
1 egg white
1 ounce (30ml) heavy whipping cream
1 1/2 ounces (45ml) dark rum (Zaya Aged Rum suggested)
1/2 ounce (1 tablespoon) Green Chartreuse
1/2 ounce (1 tablespoon) simple syrup*
Vanilla Dry Soda (or cream soda)
4 to 5 mint sprigs
  1. Combine first six ingredients in a shaker and froth with a milk frother for 30 seconds. Add ice to shaker and shake well. Strain into a highball glass. Top glass off with soda, mint sprigs and reserved Starbucks VIA.

Makes 1 serving.

*Combine equal parts granulated sugar and water, warm to melt into syrup.
