Amazing Two-Step Muffins

No recipe image available.Amazing, indeed! It takes just two ingredients, self-rising flour and softened ice cream to make these muffins.

Recipe Ingredients:

2 cups self rising flour*
2 cups ice cream (any flavor), softened**

Cooking Directions:

  1. Preheat oven to 400°F (205°C).
  2. Mix the flour and ice cream together until just blended. Spoon into muffin tins (3/4 full each cup) that have been greased.
  3. Bake for 15 to 20 minutes, or until golden brown.

Makes 12 muffins.

*Or you may substitute with 2 cups all purpose flour, 2 teaspoons baking powder and 1 teaspoon salt.

**Soften in your microwave.

Note: For variety try adding 1/2 cup nuts, mini-semisweet chocolate chips, currants, shredded coconut or whatever you desire. Use an ingredient that compliments the flavor of ice cream you use.
