Bran Banana Muffins

Bran Banana MuffinsThese hearty, good-for-you oat bran banana muffins with raisins are perfect for breakfast or snack-time.

Recipe Ingredients:

3/4 cup bran
1/2 cup oat bran
3/4 cup buttermilk
1/3 cup canola oil
3 ripe mashed bananas (about 1 cup)
4 large egg whites
1/2 cup raisins
1 cup sifted all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Cooking Directions:

  1. In large bowl, mix together bran, oat bran and buttermilk. Add oil, bananas, egg whites, and raisins.
  2. Sift together flour, baking powder, baking soda, and salt and add to batter. Carefully stir just until flour mixture is incorporated. Batter will be lumpy.
  3. Fill 18 paper lined muffin cups about 2/3 full.
  4. Bake in a preheated 400°F (205°C) oven for 20 to 25 minutes.

Makes 18 muffins.
