Bran Muffins
- 3 1/2 cups bran flakes
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking soda
1 1/2 cups granulated sugar
1/2 cup butter or margarine
1 cup warm water
2 large eggs
2 cups buttermilk
- Combine bran flakes, flour,
baking soda, and sugar in a large bowl. Cut in butter. Set aside.
In another bowl, combine warm water, eggs and buttermilk; mixing
well. Add all at once to dry ingredients; stirring only until
dry ingredients are moistened. Spoon batter into prepared muffin
cups, filling each cup two-thirds full.
- Bake in a 400°F (205°C)
oven for 20 minutes, or until golden brown. Remove from oven.
Let cool completely on wire rack.
Makes 2 dozen muffins.
