A delicious sweet quick bread made with red, ripe strawberries and walnuts.

California Strawberry-Walnut Bread

2 cups all-purpose flour
2/3 cup granulated sugar
2 1/4 teaspoons baking powder
3/4 teaspoon salt
1 cup milk
1 large egg
3 tablespoons vegetable oil
1 teaspoon vanilla extract
1 1/3 cups chopped walnuts - divided use
1 cup thinly sliced hulled strawberries
  1. Preheat oven to 350°F (175°C). Greased and flour 9-inch loaf pan.
  2. In a large bowl combine flour, sugar, baking powder and salt; mix well. Set aside.
  3. In a small bowl combine milk, egg, oil and vanilla; blend well. Gradually add milk mixture to flour mixture stirring just until the dry ingredients are moistened. Fold in 1-cup walnuts and the strawberries; spoon into prepared loaf pan. Sprinkle with remaining walnuts.
  4. Bake 1 hour, or until the center is set. Cool in the pan for 10 minutes before turning out onto a wire rack.

Makes 1 loaf.
