Cheese and Spinach Muffins

No recipe image available.Easy, savory dinner muffins made with chopped fresh spinach, Swiss and Parmesan cheeses.

Recipe Ingredients:

2/3 cup milk
1 tablespoon vegetable oil
1 large egg
1/2 cup fresh chopped spinach
1/2 cup shredded Swiss cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons green onions, chopped
2 cups biscuit baking mix

Cooking Directions:

  1. In a large bowl beat milk, oil, and egg until blended. Stir in chopped spinach, shredded Swiss cheese, grated Parmesan cheese, chopped green onions and biscuit baking mix; mix until just moistened.
  2. Divide the batter evenly among the muffin cups and bake at 400°F (205°C) for 15 minutes, or until golden brown.

Makes 12 muffins.
