Serve with a whipped honey butter.

Corn Country Squares

1 cup cornmeal
1 cup all-purpose flour
3/4 teaspoon salt
4 teaspoons baking powder
1/4 cup granulated sugar
2 large eggs
1 cup milk
1/4 cup vegetable oil
  1. In a large bowl mix together well all dry ingredients; in a medium bowl beat together eggs, milk and oil. Mix wet ingredients into dry, stirring to blend quickly (do not overmix).
  2. Pour batter into a greased 8 x 8-inch baking pan.
  3. Bake in a 400 degrees F. oven for 20 to 25 minutes, until very lightly browned on top. Remove from oven, let cool slightly and cut into squares to serve.

Makes 9 squares. Serves about 4.
