A deliciously nutty tasting quick bread, this cranberry and golden raisin loaf includes graham cracker crumbs in the batter as well as the zest of an orange.

Cranberry Loaf

1 cup all-purpose flour
1 cup graham cracker crumbs
2/3 cup packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1 cup golden raisins
1/2 cup chopped walnuts
1 tablespoon grated orange rind
1 beaten large egg
1 cup orange juice
1/3 cup vegetable oil
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together flour, crumbs, brown sugar, baking powder, and salt. Stir in cranberries, raisins, nuts, and orange rind. Add beaten egg, orange juice, and oil. Stir until just blended. Spoon into a greased 9 x 5 x 3-inch loaf pan.
  3. Bake for 1 hour, or until inserted wooden pick comes out clean. Cool in pan for 10 minutes. Remove from pan to a wire rack to cool completely. Wrap tightly to store.

Makes 1 loaf.
