These nutty date-bran muffins are a deliciously sweet way to get your daily fiber.

Date-Bran Muffins

1 cup all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 cup chopped dates
1/2 cup chopped walnuts
1 cup bran
3/4 cup milk
1 large egg
1/4 cup vegetable oil
  1. Sift together flour, baking powder, salt, and sugar into a medium bowl. Stir in chopped dates and chopped walnuts. Set aside.
  2. In another bowl add bran with milk. Let soak 5 minutes. Add egg and oil; beat well. Pour into flour mixture and stirring only until the dry ingredients are moistened. The batter will be lumpy. Spoon batter into the muffin tins, filling each cup two-thirds full.
  3. Bake in a 375°F (190°C) oven about 30 minutes, or until browned. Remove from oven. Let cool on wire rack.

Makes 1 dozen muffins.
