This hearty, honey-sweetened cornbread is best served warm.
1 cup yellow cornmeal
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
1 cup milk
1/2 cup butter, melted
1/4 cup honey
- Preheat oven to 400°F (205°C). Grease an 8-inch square baking pan; set aside.
- Combine dry ingredients in large mixing bowl. Blend together eggs, milk, butter and honey; add to the dry ingredients, stirring until just moistened.
- Pour into prepared baking pan.
- Bake for 30 minutes or until tested done if center springs back after being pressed lightly.
- Serve warm.
