Simple, honey-sweetened
bran muffins.

Bran Muffins
- 1 cup bran
1 cup milk
1/4 cup honey
1 large egg
1/4 cup vegetable oil
1 cup all-purpose flour
1/2 teaspoon baking powder
- Grease bottom of 12 muffin
cup.
- In a medium bowl blend
bran with milk; allow to sit for 5 minutes.
- In a small bowl add honey,
egg, and oil; stir until mixed. Add flour and baking powder to
honey mixture. Then fold into the bran mixture. Stir just till
moistened. Spoon into a greased muffin tin.
- Bake in a 350°F (175°C)
oven for 25 to 30 minutes or until done.
Makes 1 dozen muffins.
