Hearty cinnamon-spiced oatmeal pecan muffins sweetened with maple syrup.

Maple Pecan Muffins

2 cups all-purpose flour
1/2 cup old fashioned oats
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup butter, softened
2/3 cup brown sugar, packed
1 large egg
1/2 cup milk
1/2 cup maple syrup
1/2 cup chopped pecans
  1. Heat oven to 350°F (175°C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. Combine flour, oats, baking powder, cinnamon and salt in a small bowl; set aside.
  3. In a large bowl, cream together butter, sugar and egg. Add milk and maple syrup and combine well. Stir in flour mixture just until combined. Stir in pecans.
  4. Fill prepared muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.

Makes 1 dozen muffins.
