Maple Pecan Muffins
- 2 cups all-purpose flour
- 1/2 cup old fashioned oats
- 2 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup butter, softened
- 2/3 cup brown sugar, packed
- 1 large egg
- 1/2 cup milk
- 1/2 cup maple syrup
- 1/2 cup chopped pecans
- Heat oven to 350*F (175*C). Grease and flour a 12-cup muffin tin or line with paper liners.
- Combine flour, oats, baking powder, cinnamon and salt in a small bowl; set aside.
- In a large bowl, cream together butter, sugar and egg. Add milk and maple syrup and combine well. Stir in flour mixture just until combined. Stir in pecans.
- Fill prepared muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.
Makes 1 dozen muffins.
