A delicious, orange-scented sweet potato and nut quick bread from the heirlooom recipe file of the NC Sweetpotato Commission, Inc.

Marma-Sweet Bread

1 1/4 cups sweet potatoes,cooked and mashed
1/4 cup butter
1/4 cup brown sugar, firmly packed
2 large eggs, well beaten
2 tablespoons milk
1 teaspoon lemon juice
2 cups sifted all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup chopped nuts
1/4 cup orange marmalade
3 unpeeled orange slices
  1. Cream shortening, add sugar and beat until light and fluffy. Add eggs, sweet potatoes, milk and lemon juice, beat well.
  2. Sift flour, baking powder and salt together; add sifted ingredients and nuts to sweet potato mixture and mix only until ingredients are combined.
  3. Spread orange marmalade evenly over the bottom of greased 9 x 5 x 3-inch pan. Arrange orange slices in marmalade. Turn SweetPotato batter into pan.
  4. Bake in oven at 350°F (175°C) for 1 hour and 30 minutes. Invert on cake rack and cool before slicing.

Makes 1 loaf.
