Marma-Sweet Bread
- 1 1/4 cups SweetPotatoes,cooked and mashed
- 1/4 cup butter
- 1/4 cup brown sugar, firmly packed
- 2 large eggs, well beaten
- 2 tablespoons milk
- 1 teaspoon lemon juice
- 2 cups sifted all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup chopped nuts
- 1/4 cup orange marmalade
- 3 unpeeled orange slices
- Cream shortening, add sugar and beat until
light and fluffy. Add eggs, SweetPotatoes, milk and lemon juice,
beat well.
- Sift flour, baking powder and salt together;
add sifted ingredients and nuts to SweetPotato mixture and mix
only until ingredients are combined.
- Spread orange marmalade evenly over the
bottom of greased 9 x 5 x 3-inch pan. Arrange orange slices in
marmalade. Turn SweetPotato batter into pan.
- Bake in oven at 350*F for 1 hour and 30
minutes. Invert on cake rack and cool before slicing.
Makes 1 loaf.
