Marvelous Marmalade Pumpkin Muffins

1 2/3 cups all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1 large egg
3/4 cup orange marmalade, divided use
1/2 cup canned pumpkin puree
1/4 cup vegetable oil
1/4 cup frozen orange juice concentrate, thawed
1 teaspoon grated orange peel
  1. Preheat oven to 350°F (175°C). Grease or paper-line 12 muffin cups.
  2. Combine flour, sugar, baking soda, baking powder, salt, cinnamon, and nutmeg in large bowl. Beat egg, 1/2 cup orange marmalade, pumpkin puree, oil, orange juice concentrate and orange peel in medium bowl. Add to flour mixture; stir just until moistened. Spoon batter into prepared muffin cups, filling 2/3 full.
  3. Bake for 20 to 25 minutes or until wooden pick inserted in muffin comes out clean. Heat remaining orange marmalade; spread over warm muffins.

Makes 1 dozen muffins.
