The mayonnaise replaces
both the egg and oil normally used in muffin recipes.

- 1 cup all-purpose flour
1/2 teaspoon baking powder
2 tablespoons mayonnaise
1/2 cup milk
- In a bowl, combine flour,
baking powder, mayonnaise, and milk; stirring until smooth.
- Spoon the batter into
a greased muffin tin, filling two-thirds full.
- Bake at 425°F
(220°C) for 10 to 12 minutes.
Makes 6 muffins.
