Ground almonds, rum, vanilla,
cinnamon, orange peel and raisins are what give these muffins
a traditional German flavor of yesteryear.

German Muffins
- 3/4 cup butter, softened
1/2 cup granulated sugar
2 large eggs
1 tablespoon rum
1 teaspoon vanilla extract
3 tablespoons milk
1/2 teaspoon ground cinnamon
2 teaspoons baking powder
2 1/4 cups all-purpose flour
1/4 cup almonds, ground
1 tablespoon grated orange peel
1/4 cup raisins
- In a large bowl beat together
butter with sugar until creamed. Using a wire whisk; stir in
eggs, rum, vanilla, and milk. Set aside.
- In another bowl, mix together
cinnamon, baking powder, and flour. Fold into butter mixture
until blended-well. Gently mix in ground almonds, grated orange
peel, and raisins. Pour batter into greased muffin tins, filling
one-half full.
- Bake in a 375°F (190°C)
oven for 25 to 30 minutes, or until browned. Remove from oven.
Let completely cool on wire rack.
Makes 1 dozen muffins.
