These cheesy, savory muffins would be great with a steaming hot bowl of soup. Especially good served warm.
Onion-Cheese Muffins
- 2 cups all-purpose flour
1 cup french fried onions, crumbled
1 cup milk
3/4 cup shredded cheddar cheese
2 large eggs, beaten
3 tablespoons vegetable oil
1 tablespoon baking powder
1 teaspoon onion salt
- Preheat oven to 350°F. Grease a 12-cup muffin tin, or line with baking cups.
- In a large bowl, combine flour, french fried onions, milk, cheddar cheese, beaten eggs, oil, baking powder and onion salt. Mix until just blended, batter should be somewhat lumpy.
- Fill each muffin 2/3 full of batter.
- Bake for 15 to 18 minutes or until a wooden pick inserted in the center of a muffin comes out clean.
Makes 12 large muffins or 24 mini-muffins.
