Wake the family up to the heavenly aroma
of these orange muffins baking in the oven.
Orange Muffins
- 1 1/2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoon baking powder
- 1/2 teaspoon salt
1 large egg, slightly beaten
1/2 cup milk
1 teaspoon grated orange rind
1/2 cup orange juice
1/2 cup vegetable oil
1/2 cup golden raisins
- Heat oven to 400°F (205°C). Grease
and flour a 12-cup muffin tin or line with paper liners.
- Combine flour, sugar, baking powder and
salt in a small bowl; set aside.
- In another bowl, whisk egg, milk, orange
rind, orange juice and oil until smooth. Add dry ingredients
mixing just until moistened. Gently stir in raisins.
- Fill prepared muffin tins two-thirds full.
Bake for 18 to 20 minutes or until muffins test done. Cool in
pan on wire rack.
Makes 1 dozen muffins.
