A festive yeast bread made with crushed
pineapple, nuts and cranberries. This bread makes wonderful toast.
This recipe is written for bread machines.
Pineapple Cranberry
Bread
- 1 cup cranberry juice
2/3 cup crushed pineapple, well drained
2 tablespoons butter or margarine
- 3 cups white bread flour
1 cup rolled oats
1/2 teaspoon salt
2 teaspoons active dry yeast
1/2 cup finely chopped cranberries
- 1/2 cup chopped nuts or flaked
coconut
- Place ingredients in the bread machine
pan in the order suggested by the manufacturer. (Add cranberries
and nuts at the beep, or end of the first kneading.)
- Select Sweet setting and start machine.
Makes one (1 1/2 pound) loaf.
