A festive yeast bread made with crushed pineapple, nuts and cranberries. This bread makes wonderful toast. This recipe is written for bread machines.

Pineapple Cranberry Bread

1 cup cranberry juice
2/3 cup crushed pineapple, well drained
2 tablespoons butter or margarine
3 cups white bread flour
1 cup rolled oats
1/2 teaspoon salt
2 teaspoons active dry yeast
1/2 cup finely chopped cranberries
1/2 cup chopped nuts or flaked coconut
  1. Place ingredients in the bread machine pan in the order suggested by the manufacturer. (Add cranberries and nuts at the beep, or end of the first kneading.)
  2. Select Sweet setting and start machine.

Makes one (1 1/2 pound) loaf.
