Spiced pumpkin oat muffins are the perfect autumn breakfast treat.

Pumpkin Oat Muffins

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon pumpkin pie spice
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup canned pumpkin
1/2 cup packed brown sugar
1 large egg
1/4 cup milk
1/4 cup vegetable oil
1 cup quick-cooking oats
1/2 cup raisins
1/2 cup packed brown sugar
1 tablespoon all-purpose flour
1/4 teaspoon pumpkin pie spice
2 tablespoons butter or margarine
  1. Sift together 1 cup flour, baking powder, 1 teaspoon pumpkin pie spice, baking soda, and salt; set aside.
  2. Combine pumpkin, 1/2 cup brown sugar, egg, milk, oil, oats, and raisins in a large bowl; blend well. Add dry ingredients all at once, stirring just enough to moisten. Spoon batter into greased muffin tins, filling two-thirds full. Sprinkle with crumb topping made by combining 1/2 cup brown sugar, 1 tablespoon flour, 1/4 teaspoon pumpkin pie spice, and butter.
  3. Bake in 400°F (205°C) oven 18 to 20 minutes or until golden brown. Remove from oven. Let completely cool.

Makes 1 dozen muffins.
