Sour Cream Chocolate Chip Muffins

5 tablespoons butter, melted and cooled
2/3 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup sour cream
1 large egg
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1 1/2 cups all-purpose flour
3/4 cups miniature semisweet chocolate chips
  1. Heat oven to 350*F (175*C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. In large mixing bowl, combine butter, sugar, vanilla, salt, sour cream and egg; mix well. Stir in baking soda and baking powder. Add flour and stir until just combined; stir in chocolate chips.
  3. Fill prepared muffin tin three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.

Makes 1 dozen muffins.
