Sour Cream Chocolate Chip Muffins
- 5 tablespoons butter, melted and cooled
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup sour cream
- 1 large egg
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 1/2 cups all-purpose flour
- 3/4 cups miniature semisweet chocolate chips
- Heat oven to 350*F (175*C). Grease and flour a 12-cup muffin tin or line with paper liners.
- In large mixing bowl, combine butter, sugar, vanilla, salt, sour cream and egg; mix well. Stir in baking soda and baking powder. Add flour and stir until just combined; stir in chocolate chips.
- Fill prepared muffin tin three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.
Makes 1 dozen muffins.
