Sweet Potato Craisin Loaves

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
3/4 cup granulated sugar
1/2 cup pure maple syrup
1 1/2 cups mashed cooked yams or sweet potatoes
1/2 cup butter, softened
2 large eggs
1 cup half and half
1/2 cup Ocean Spray Craisins (dried cranberries)
1/4 cup chopped walnuts or pecans
  1. Preheat oven to 350 *F (175*C). Generously grease two 9 x 5x 2 1/2-inch
    baking pans; set aside.
  2. In medium bowl combine flour, baking powder and spices, mixing well. Set
    aside.
  3. In large mixing bowl, beat together the sugar, syrup, sweet potatoes and
    butter until smooth. Add the eggs and blend well. Alternately, stir in the half and half and flour mixture to the sweet potato mixture, until just mixed. Do not over mix. Fold in the craisins and nuts. Pour into prepared pans.
  4. Bake for 45 minutes or until a wooden pick inserted in center comes out clean. Cool for 10 to 15 minutes on wire rack before removing from pans. Cool completely and wrap tightly to store.

Makes 2 loaves.
