Wheat Germ Cornmeal Muffins

1 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
1/4 cup wheat germ
1/4 cup granulated sugar
1 tablespoon baking powder
1/8 teaspoon salt
2 large egg whites
1 cup milk
3 tablespoons vegetable oil
  1. Combine flour, cornmeal, wheat germ, sugar, baking powder, and salt in a medium bowl. Make a well in the center. Set aside.
  2. In a small bowl, combine egg whites, milk, and oil. Add all at once to the flour mixture, stirring until just moistened. Spoon the batter evenly into muffin cups, filling each 3/4 full.
  3. Bake in 400*F oven for 20 minutes, or until very lightly browned. Cool completely on wire racks.

Makes 6 muffins.
