All this streusel-laced AND topped coffee
cake needs is to be accompanied with steaming mugs of robust
coffee.
Best Coffee Cake
- 1 cup granulated sugar
1 cup brown sugar, packed
1 cup butter or margarine
3 cups all-purpose flour
1/2 cup chopped nuts
1 1/2 teaspoons ground cinnamon
1 cup buttermilk
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
- Preheat oven to 350°F (175°C). Grease
a 13 x 9 x 2-inch baking pan; set aside.
- Combine the first 6 ingredients until
crumbly. Reserve 1 cup of crumb mixture and set aside for topping.
- To the remaining crumb mixture add the
rest of the ingredients from the buttermilk to the baking soda
and stir by hand to combine. Mixture
will be slightly lumpy.
- Pour into prepared baking pan. Top with
the reserved 1 cup crumb mixture and bake for 25 or 30 minutes
or until tested done when wooden pick inserted in center comes
out clean.
- Serve warm.
Makes 16 servings.
