Vanilla-scented cottage
cheese pancakes with fresh blueberries.

Cheese Pancakes
- 1 1/2 cups cottage cheese
4 large eggs
1/2 cup all-purpose flour
1/4 cup granulated sugar
2 tablespoons butter, melted
2 teaspoons vanilla extract
1 cup blueberries
- Combine cottage cheese,
eggs, flour, sugar and butter in a bowl; mix well. Stir in vanilla;
add the blueberries.
- Cook batter on a hot greased
griddle until light brown on both side; turning once.
- Serve with butter and
maple syrup.
Makes 14 pancakes.
