Go north of the border for breakfast with these Canadian-style pancakes featuring chopped apple and honey. Top with real maple syrup and serve with a few sausage links for a hearty breakfast.

Canadian Apple and Honey Pancakes

2 cups all-purpose flour
1/8 teaspoon salt
1 1/2 cups apple juice
4 tablespoons vegetable oil - divided use
2 large eggs
1/2 cup honey
2 teaspoons baking powder
1 apple, peeled, cored and chopped
Maple syrup for accompaniment
  1. Combine flour, salt, apple juice, 2 tablespoons oil, eggs, honey, and baking powder. Add chopped apple and stir until smooth.
  2. Spoon onto a hot griddle, greased with 2 tablespoons oil, and cook on medium heat. Turn when the bubbles just begin to break and brown the other side. Serve with maple syrup.

Makes 4 servings.
