Chill Chasin' Breakfast Sandwich

Recipe Ingredients:

2 teaspoons butter
1 large egg, fried
1 whole wheat sandwich bun, toasted
1 tablespoon reduced-fat mayonnaise
1 slice reduced-fat American cheese
1 piece leaf lettuce
1 ounces sliced or shaved ham, cooked ham

Cooking Directions:

  1. Preheat butter in non-stick skillet until just hot enough to sizzle a drop of water.
  2. Break egg and slip into pan. Immediately reduce heat to low.
  3. Cook slowly until whites are completely set and yolks begin to thicken, but are not hard. Slide a turner under each egg, and carefully flip it over in the pan. Cook second side to desired doneness. Sprinkle with salt and ground black pepper if desired.
  4. Spread mayonnaise on each half of bun. Layer egg, cheese slice, lettuce and ham on one side of bun. Top with other bun.

Makes 1 serving.

Tip: May use toasted light multi-grain English muffin, whole wheat pita pocket, Canadian bacon, crisp bacon, smoked turkey, mozzarella cheese, provolone cheese, tomato slice, sliced mushrooms, etc.
