Chorizo Breakfast

No recipe image available.Serve these chorizo sausage, egg, corn and rice burritos for breakfast, brunch or supper.

Recipe Ingredients:

1 1/2 pounds link chorizo sausage
6 large eggs, beaten
1 (10-ounce) can corn, drained
1 cup cooked rice
12 flour tortillas
Salsa for accompaniment

Cooking Directions:

  1. Slice sausage and cook in a skillet until brown, stirring frequently.
  2. Add beaten eggs, stirring constantly.
  3. Stir in canned corn (drained) and cooked rice.
  4. Spoon onto flour tortillas and roll or fold to enclose the filling.
  5. Serve with salsa.

Makes 12 servings.
