An easy breakfast or brunch
pie made with eggs, hash browns, Swiss and cottage cheese and
topped with a garnish of crisp crumbled bacon.
Crustless
Potato Quiche
- 5 large eggs
1 (12-ounce) package frozen hash brown potatoes
1 cup shredded Swiss cheese
1 green onion, chopped
1/2 cup cottage cheese
1/8 teaspoon liquid hot pepper sauce
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1/8 teaspoon paprika
6 strips of bacon
- In a large bowl mix together
eggs, thawed hash brown potatoes, shredded Swiss cheese, chopped
green onion, creamed cottage cheese, liquid hot pepper sauce,
salt, and pepper. Pour into a lightly greased 9-inch pie plate
and sprinkle with paprika.
- Bake at 350°F (175°C) for 25 minutes,
or until the center is set.
- Meanwhile, cook strips
of bacon until crisp; drain and crumble on top.
Makes 6 servings.
