Dutch Apple Pancake

2 cups milk
1 cup all-purpose flour
6 large eggs
1/4 cup plus 3 tablespoons sugar, divided use
1/8 teaspoon almond extract
4 tart green apples, peeled, cored and sliced into thin wedges
1 teaspoon ground cinnamon
Powdered sugar for sprinkling
Assorted jams or preserves for accompaniment as desired
  1. Preheat oven to 375*F (190*C). Generously grease a 10-inch iron skillet and heat in oven.
  2. Meanwhile, combine milk, flour, eggs, 3 tablespoons sugar and almond extract in a bowl, mixing well. Pour into hot skillet, tilting pan so that batter forms collar around sides of pan.
  3. Arrange apple wedges in layer over batter. Combine remaining 1/4 cup sugar and cinnamon. Sprinkle evenly over apples.
  4. Bake for about 45 minutes or until set and surface is browned. Sprinkle with
    powdered sugar. Serve with jams and preserved if desired.
