Delicious green apple oven pancake, topped
with powdered sugar and served with fruit jam or preserves.
Dutch Apple Pancake
- 2 cups milk
1 cup all-purpose flour
6 large eggs
1/4 cup plus 3 tablespoons sugar - divided use
1/8 teaspoon almond extract
4 tart green apples, peeled, cored and sliced into thin wedges
1 teaspoon ground cinnamon
Powdered sugar for sprinkling
- Assorted jams or preserves for
accompaniment as desired
- Preheat oven to 375°F (190°C).
Generously grease a 10-inch iron skillet and heat in oven.
- Meanwhile, combine milk, flour, eggs,
3 tablespoons sugar and almond extract in a bowl, mixing well.
Pour into hot skillet, tilting pan so that batter forms collar
around sides of pan.
- Arrange apple wedges in layer over batter.
Combine remaining 1/4 cup sugar and cinnamon. Sprinkle evenly
over apples.
- Bake for about 45 minutes or until set
and surface is browned. Sprinkle with powdered sugar. Serve with
jams and preserved if desired.
Makes 6 servings.
