Easy Rice Pancakes
Easily fortify and add texture to pancake mix pancakes by adding cooked rice. A great use for leftover rice.
2 cups complete pancake mix
1 1/2 cups water
1 1/2 cups cooked brown or white rice
Syrup and butter for accompaniment (optional)
- Beat pancake mix with water in large bowl only until smooth. Stir in rice.
- Pour batter onto hot greased griddle, using about 1/4 cup for each pancake. Cook until bubbles form on top and underside is nicely browned. Turn and brown other side. Turn ONLY once.
- Serve with butter and syrup, if desired.
Makes 12 (4-inch) pancakes.
