Favorite Griddle Cakes
This great basic recipe for griddle cakes, also called pancakes and flapjacks, could become your favorite griddle cakes, too.
1 1/4 cup all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
1 large beaten egg
1 cup milk
2 tablespoons melted butter or margarine
- Mix flour with baking powder, sugar, and salt.
- Combine egg, milk, and butter. Add to dry ingredients, stirring just until combined; do not over mix. Batter will be lumpy.
- Heat a lightly greased griddle or skillet over medium heat (375°F / 190°C). Griddle is ready when a few drops of water bubble and skitter rapidly around.
- For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until surface is covered with bubbles and appear dry around the edges. Turn and cook other side until golden brown.
Makes 12 (4-inch) pancakes.
