Green Chile Quiche

1/2 pound ground beef
1/4 cup onion, chopped
1 (4-ounce) can diced green chili peppers
1 cup shredded Monterey Jack cheese
3 large eggs
1 cup milk
1/4 teaspoon salt
1/8 teaspoon garlic powder
1 (9-inch) unbaked pie shell
  1. Prick the bottom and sides of a 9-inch unbaked pie shell with a fork; bake at 375°F (190°C) for 10 minutes. Cool on a wire rack.
  2. In a skillet over medium heat, cook ground beef and chopped onion until the beef is browned, stirring to crumble; drain. Spoon the beef mixture into the cooked pie shell then top with diced green chili peppers and shredded Monterey Jack cheese.
  3. In a medium bowl combine eggs, milk, salt, and garlic powder; mix well. Pour into the pie shell.
  4. Bake at 375°F (190°C) for 35 minutes, or until the center is set.

Makes 8 servings.
