A light and fluffy scrambled egg custard topped with ham and cheese and baked on a pizza crust. A fun and filling brunch.

Ham and Egg Breakfast Pizza

4 tablespoons butter - divided use
2 tablespoons all-purpose flour
1/3 cup milk
6 large eggs, beaten
1/2 teaspoon salt
1 (12-inch) pizza crust
2 cups diced ham
2 cups shredded mozzarella cheese
1 (4-ounce) can sliced mushrooms, drained
1/4 cup thinly sliced green onion
  1. Heat oven to 400°F (205°C).
  2. In a small saucepan, melt 2 tablespoons butter over medium heat. Add flour; cook for 1 minute, stirring constantly. Add milk and cook until mixture thickens slightly. Remove from heat.
  3. In a small skillet, melt remaining 2 tablespoons butter over medium heat. Add eggs and cook, stirring gently, until softly scrambled. Combine milk sauce with eggs; stir in salt. Place pizza crust on a baking sheet and spread eggs over the top. Top with ham, cheese, mushrooms and green onion. Bake 15 to 20 minutes or until cheese is melted and bubbly.

Makes 6 servings.
